Day 22: Let Them Eat Cake...

Well folks, another busy day down with the best dressed cake competition taking up most of the morning:



Let me introduce to you 'The Alternative Easter Cake" a variation of the Aunt Florance's fabulous orange cake, with orange candied peel carrots and rabbits. The taste was full marks but the context didn't work well, orange rabbits on an Orange cake is a bit ahead of its time so Rory O' Connell aka Simon Cowell didn't put me through to the next round.

As well as the cake, I made a warming French Onion soup which was delicious unfortunately I didn't get a pic so you have to take my word for it.

Rachel took the afternoon demo, she read out an article she came across in the Irish Times about a past student of the course, Fiona Wymes who went onto work in Violet Bakery in London before setting up her own bakery in Dublin named 'LouLou'.

It's great to hear success stories from past students as it makes all the hard work worthwhile.



This afternoon Rachel did the afternoon demo where she demonstrated Chicken Liver Pâté which is available from the Midleton Farmer's Market every Saturday- it's a must try as it is delicious with Melba Toast.


Then a lovely Pan-fried Seabass with Nam Jim, Tomato Mayonnaise and Rocket Leaves. Nam Jim is a simple Thai salad dressing which marries grilled beef and fish well. It made the fish taste so incrediable.

Then two very healthy vegetable dishes:


Buttered Spinach


Aubergine with chilli and mint.

Then a Mile High Lemon Meringue, it was superb. 

Tomorrow's blog post will be alot more exciting, it's a wine demo followed by Afternoon Tea and Cakes with Tea Guru Sean Moran of Nood. I'm so looking forward to both.
