This entry is going to have to be quick I'm afraid, I helped make dinner this evening for my housemates and have to be up at dawn to go pick vegetables... I'm meeting some guy outside the school and we're getting into his van and driving to the glasshouse to pick veggies, good lord!
So, today was a theory day based around making cheese, butter, yogurt and then in the afternoon it was all about the wine.
Eddie O' Neill from Teagasc came in to demonstrate how to make cheese, it was wonderful. Eddie talked us through how to manufacture Gouda Cheese; which milk to use, how to store the milk, pasteurisation, curd preparing, washing the curd and filling it into moulds.
Then Timmy, Darinas' husband discussed his cheese and went through a taste test. Some of his cheeses were 3 months old, others 6 months old and others 12 months old. It was interesting to note that some of Timmys' cheeses were dry owing to the timing of the turning of the curd along with many other reasons.
