After salad duty this morning at Silly O' Clock, a new week began but on my own. I have no partner this week (and between you and I... I love it! I have all the space in the world to stack my breads!). My teacher this week expects nothing short of perfection- so it was a long morning but she taught me lots.
On the menu today was Duck Breast with Spiced Lentils and Caramelised Apples:
Panna cotta with caramel:
I filleted the duck well with the only mistake I made was scoring the fat too deep and then when I served the duck I never cut the duck breast into pieces. Although, I have to admit, I did enjoy the meal and I am considering doing duck for my final exam. Panna Cotta is definitely a dessert I am considering for the final exam, I got full marks for it and it tasted perfect. The first two panna cottas I tried to get out of the ramekin collapsed but it was a case of third time lucky.
Straight into this afternoon's demostration which was mainly focused on Ballymaloe House Sunday buffet which has been running in Ballymaloe House for over 35 years. The idea was thought up to give guests more of a variety but the buffet is in place to ensure that the staff of the house get to go home early following a long weekend.
Freshness, flavour and texture are the main concepts behind the Ballymaloe Buffet with all the food cooked in the afternoon and includes anything from crabs to sea urchins to beef or pork. Throughout the demo this afternoon, Darina made a variety of dishes from Tomato & Basil Salad, Egg Mayonnaise, Glazed Loin of Bacon, the delicious Ballymaloe Vanilla ice-cream, Praline ice-cream and not to mention the famous Ballymaloe Ice-bowl.
Monday over, I kicked off the shoes and I'm now listening to:
